One of the most wonderful all season dishes is Roasted Butternut Squash. I love it because it's one of the easiest side dishes I have ever made in such a short amount of time. 


I cut the top and bottom off the squash. I peeled, seeded and cut the squash in half. Then I cubed it and put a mixture of sugar, butter and spices in a bowl and mixed them up. Normally you would use olive oil, however I wanted a more buttery side dish.

 
I spread them out on the baking dish and threw them into the oven at 400 degrees for 30 minutes. They came out absolutely perfect! Soft and buttery...It's so basic I think anyone can make this side dish. 


I spooned the roasted squash onto a spinach salad that included blue cheese crumbles, almonds, cherry's and white wine vinaigrette dressing. I can say that my guests loved the meal that I prepared for them. It's always a good day when you get a good review...

Every year we have a traditional cookie party so the boys can make cookies for Santa. 
This year the boys and I went next door to visit our best friends and have the cookie party there.
It was quite an experience this year and the cookies were not quite the BLUNDER we had anticipated.









With all of the fun cookie cutters and rolling pins, it's not as fun if the cookie dough ends up a bit too sticky to roll and cut. Which is exactly what happened! No matter how hard we tried to fix it, it just was going to happen. So instead, the kids got creative and we let them go their own way this time. This is what they ended up with.. 




The party was a success! 
They had a great time and Santa even made an appearance that night.

Gourmet Lunch at Home Isn't a Luxury...It's a Daily Event

                                                  What's for lunch... It's not Pizza!

I recently took some time off work that was desperately needed. I found myself looking for special recipes to cook for the kids. They always ask for pizza at lunchtime and in good conscience could not cave to their ongoing request. So I decided to come up with a new way to get them to eat salad.



So what is one of their favorite foods, besides pizza? Quesadillas! I wanted them to start eating healthier, so I decided to combine one of their favorite foods and one of mine. I made regular quesadilla and spooned in this wonderful spinach, cranberry and blue cheese salad with white wine vinaigrette dressing and rolled the quesadilla into a wrap.





I added some buttery pan fried salmon to the dish to form a balanced meal. I can say that it was a hit! My kids appreciated the fact that I came up with an entirely different way for them to consume "Rabbit Food" as they call it...

As a side note: I added a bit of avocado and garlic salt to the wrap as well. Make sure to use the large burrito size tortillas when making these wraps.
