Quesadilla On The Grill
 
 
What's for dinner? How about some quesadillas. But not just any normal everyday quesadilla. What about quesadillas on the grill? Now that's thinking outside the box! Add a little cheesy rice to the equations and you have yourself a tasty yet out of the ordinary treat for dinner.
 
 
Start out by putting the chicken on the grill. If you have a side burner, you can cook your rice at the same time. For this recipe I choose 4 leg quarters, half a bottle of BBQ sauce, 1 pkg of broccoli cheese rice, Colby Jack cheese and Aztec tortillas. Salt to taste.
 
Once the BBQ chicken and rice are done, you will need to shred the cheese and remove the chicken from the bone. Take the tortillas and place four of them on the grill. Pile the cheese, chicken and the rice on the tortillas and then add one more on top. Close the grill for about 6 minutes. Once the tortillas have browned,  turn them.
 
Cut them into slices and garnish as desired. Add some of the chicken to the rice and garnish with shredded cheese as a side dish.  A simple solution for a quick and easy dinner made entirely on the grill.
